Are Air Fryers Healthier? What Actually Got Measured

Are air fryers healthier is really two questions wearing one coat. Do they cut the fat, and do they cut the compounds that form when starch meets high heat.

The first has a clear answer. The second has two answers in the literature that disagree by a factor of about seventy, and the disagreement is more instructive than either number.

The Fat Claim Is the One That Holds

This part is settled. A comparative study in the Journal of Food Science put deep fat frying against air frying under otherwise similar conditions and found air frying produced products with, in the authors’ words, a substantially lower fat content while keeping similar moisture and colour.

Note what that sentence does and does not say. It says substantially lower. It does not give a percentage, and neither will this article, because the figure depends entirely on the protocol — how much oil you use, whether you toss the food in it, and what you are cooking.

That is the manufacturer’s own testing rather than independent work, and the direction matches the published finding even if the number is theirs.

Acrylamide: It Depends Entirely on Which Paper You Read

Acrylamide is the compound that forms when starchy food browns at high temperature. It is the reason “is air frying healthier” is not only a fat question.

Here the literature splits.

A 2022 study in Frontiers in Nutrition compared deep frying at 180 °C for six minutes against air frying at 190 °C for eighteen, and measured acrylamide falling from 649.75 to 342.37 nanograms per gram — a 47.31% reduction. It also reported up to 57.04% less 5-hydroxymethylfurfural, another heat-formed compound, and higher moisture in the air-fried samples.

A 2024 study in the same journal found the opposite ordering: air frying highest at 12.19 µg/kg, deep frying at 8.94, oven frying at 7.43. Crucially, the authors themselves reported the difference between methods as not statistically significant, at p = 0.789.

So one paper says a large reduction, the other says no meaningful difference and, if anything, the air fryer ranked worst.

Why the Two Papers Disagree by a Factor of Seventy

This is the part worth understanding, because it decides which result to trust.

Put the two deep-frying numbers side by side. Dong and colleagues measured 649.75 ng/g. Navruz-Varlı and Mortaş measured 8.94 µg/kg. Those units are the same thing. The same food, cooked the same way, measured about seventy times apart.

A published commentary in Frontiers in Nutrition addressed exactly this. Its central objection is not about interpretation but about measurement: every acrylamide value in the 2024 paper falls below that study’s own limit of quantification of 18.20 µg/kg, which makes the three cooking methods indistinguishable from each other rather than genuinely ranked.

The commentary adds that the detection limits were established using potato samples that already contained acrylamide rather than true blanks, and that the reported values sit roughly ten times below prior literature — noting that FDA figures for potato chips run from 59 to 5,200 µg/kg, orders of magnitude above anything the 2024 study reported.

None of that makes the 2024 authors dishonest. It means their instrument could not resolve the differences they tabulated, and a table of numbers below the limit of quantification is a table of noise.

One More Thing That Got Measured

The 2022 study also looked at what happens to the starch itself, which almost no coverage mentions.

Air-fried chips came out with more slowly digestible starch — 48.54% to 58.42%, against 45.59% for deep frying — and less resistant starch, 20.08% to 29.34% against 35.22%.

Those two findings point in opposite directions. More slowly digestible starch is generally treated as the favourable outcome. Less resistant starch is generally not. Quoting only the first half is what a product page would do, and it would be selective.

The honest summary is that the starch fraction shifts, that the shift is not uniformly in one direction, and that what it means for how you actually respond to the meal is not settled by two percentages.

So What Can You Actually Say

Three things, and no more than three.

Fat goes down substantially. Peer-reviewed, consistent, and the main reason to own one.

Acrylamide probably goes down too, on the strength of the study whose measurements were in a range the equipment could resolve. Treat that as likely rather than proven, because a single study is a single study.

It is not a health food conversion. Chips cooked in an air fryer are still chips. The cooking method changes the fat and possibly the heat-formed compounds; it does not change what the food is.

What You Trade

The same 2015 study is candid about the cost, and it is not money.

Air frying took 21 minutes against 9 for deep frying under comparable conditions. That is more than double, and it is per batch, in a basket smaller than a fryer. It also produced significantly different texture and sensory characteristics, with less starch gelatinisation. The result is not deep-fried food with the fat removed. It is a different food that resembles it.

Whether that trade is worth making is a taste question, and no study will settle it for you.
